The eggplant is just browned a little bit in olive oil.
There are layers of tomato and some sliced onions, a few seasonings.
It later gets topped with panko and baked until veggies are tender and
panko is browned.

…but I forgot to sync my iPhone earlier and now it’s taking forever to sync/back up.
I thought I’d take a moment to pop into my mostly neglected blog and say hi to anyone who is still reading. Maybe I’ll be surprised and someone will say hi back.
It’s funny because I’ve been hearing some people say that Twitter is replacing their RSS feeds since a lot of bloggers (like me) Tweet out all their online activity. I find that my friends leave comments on Facebook or @ me on Twitter instead of commenting here. (For the record, I prefer the comments here over Facebook!)
I’ve also heard that blogs are becoming passé; that these new social networking platforms (like Facebook and Twitter) are replacing blogs. Well, I think that it’s much easier to post bite-sized content on these sites, but that there is still a place for blogging as a medium for people to post content that is longer and perhaps more complex (i.e., photo essays vs a single picture, longer written posts, etc.)
For me, I miss the “brain barf” I used to do here. I like to blame lack of time (totally true), but it’s also that I think I’ve become even more private in the last few years. Regardless, Moye pointed out to me earlier this week that I’m overdue for a vacation.
I’m really trying to plan it, however the more I think about it, the less likely I think it’ll happen anytime soon.
I think if I can just wrap my mind around getting a few outstanding projects off my plate, I’ll be a lot better off emotionally. Of course, I’ve been saying that for months, so wish me luck.
She was the last of my grandparents to go and sometimes I am sad that I live in a world without my grandparents anymore.
I love her very much and am grateful that I have many memories of her as an active, beautiful woman.
One of the traditions my grandparents began was having a formal family portrait taken around their anniversary, December 26. Usually we took the pictures at home via tripod & self-timer, but the picture above is a section from our family portrait done in a professional photo studio one year. I think I’m about 4 years old in this picture and I’m in my Dad’s lap, sitting next to my Grandma & Grandpa. I still remember that night vividly. I especially remember how fascinated I was when the photographer came around with the light meter and I kept asking what he was doing with it. I can’t believe the three people in this picture with me have all passed away.
All is right with the world again.
