Recipe: Eggplant à la Ritz

Yoshi’s mom sent us (ok, me) a recipe from the Mercury News yesterday:

Eggplant à la Ritz

1 eggplant
1 egg
1 clove garlic, minced or pressed
1/2 cup cracker crumbs (Ritz or saltines)
1/2 cup grated Cheddar cheese
2 tablespoons Parmesan cheese
1 small green onion, chopped
2 teaspoons parsley, chopped
Salt and pepper
Olive oil

Peel, dice and parboil eggplant for about 8 to 10 minutes, until almost tender. Mix eggplant with all remaining ingredients except olive oil until well blended. Shape tablespoonfuls of the mixture into patties and fry in olive oil until brown. Turn patties over and brown on other side.

    It sounds delicious except for the eggplant. I am not fond of it, but love all the other ingredients.

    As someone knowledgeable about crackers, this is going to taste completely different depnding on whether you use Saltines or Ritz crackers.
